3/4 c Dry lentils 1/4 c Snipped parsley
1/4 c Brown rice 1/4 c Toasted wheat germ
1 Slightly beaten egg -Pam non-stick spray
1/2 c Shredded Swiss cheese 1/3 c Chopped green pepper
1/4 c Chopped onion 1/4 c Chopped carrot
1/4 c Fine dry bread crumbs
Cook lentils and rice in 3 1/2 cup water, simmer, covered 45-50
minutes. Drain and mash slightly. Cool 15 minutes. Stir in egg,
cheese, onion, crumbs, parsley and 1/2 teaspoon salt. Shape into 4
patties, 1 inch thick. Coat with wheat germ. Spray skillet with Pam,
cook patties over medium heat 3 minutes on each side (or bake in 450
degree oven 10 minutes). Cook carrot and pepper in boiling water just
until tender. Serve each pattie topped with cooked vegetables.
