1 c Ham 3 oz Sauteed mushrooms
12 Eggs, beaten
---------------------------SAUCE--------------------------------
1 tb Butter 1 c (4 oz.) Velveeta cheese
2 tb Flour -topping
1/2 ts Salt 2 1/4 c Bread crumbs
1/8 ts Pepper 1/8 ts Paprika
2 c Milk 3 tb Butter
Fry 1 cup ham. Add 12 eggs, beaten. Scramble until just set. Fold
sauteed mushrooms and eggs into cheese sauce. Sauce: Melt butter.
Blend in flour, salt and pepper. Add milk. Cook and stir. Stir in
Velveeta cheese until melted. Place in 9 x 13 inch dish. (Can be
refrigerate overnight.) Combine bread crumbs, paprika and butter;
saute. Sprinkle on top. Bake at 350 degrees for 30 minutes (more if
