3 1/2 c Brown rice, cooked 1 ts Cinnamon
6 oz Apple juice concentrate *1 Equal sweetner to taste *2
6 oz Water 1/2 c Walnuts, chopped
1 1/2 c Apple, chopped
*1 use apple juice with no sugar added. *2 can be substituted with any
comparable sweetner.
Place first 4 ingredients in sauce pan and bring to a boil. reduce
heat to medium high. Cook 5-8 minutes or until liquid cooks down and
apples are tender. Stir constantly. Pour into 4 bowls, sprinkle on
sweetner and top with walnuts.
