1 lb Fresh spinach leaves 2 Large eggs, beaten
Or 2 tb Chopped parsley
1/2 lb Frozen spinach, thawed 2 tb Bread crumbs
8 fl Brown rice 1 tb Melted butter
16 fl Hot water Cayenne
1 Onion, chopped Nutmeg
1 tb Oil Salt
1 ts Butter Pepper
4 oz Grated cheddar cheese
Melt the butter and oil in a saucepan and soften the onion it it, then
stire in the rice to get it coated with oil. Add the hot water, stir
once, and simmer gently with a lid on for 40 minutes or until the
grain is cooked.
As soon as the rice is cooked, cool it in a bowl, then combine it
with the grated cheese and stir in the eggs and parsley followed by
the chopped spinach. Season well and add a good grating of nutmeg.
Now place the mixture into a large oiled pie dish, mis the
breadcrumbs with the melted butter and cayenne and sprinkle that over
the top.
Bake in the centre of the oven for about 35 minutes.
