1 ts Canola or vegetable oil 1 c Quick-cooking barley
1 Onion(s), finely chopped 1 tb Thyme, chopped or
1 Garlic clove(s), minced 1 ts Dried thyme
1/2 c Orzo 2 tb Scallion greens, chopped
3 c Chicken stock Salt and pepper to taste
In a medium saucepan, heat oil over medium heat. Add onions and saute
until softened, about 5 min. Add garlic and orzo and saute until orzo
is golden, 3-5 min. Add chicken stock and bring to a boil. Add barley
and thyme. Stir once, reduce heat to low, cover, and simmer for 10
min. Turn off heat and let stand for 5 min to absorb any remaining
liquid. Stir in scallions. Season with salt and pepper and serve.
