Cooking Preparation of the Recipe:
1 c All-purpose flour 2 ea Eggs -- lightly beaten
1 c Packed brown sugar 1 c Oatmeal -- leftover
1 ts Baking powder 1 c Raisins
1 ts Baking soda 1 ts Vanilla extract
1/2 c Vegetable oil
In large bowl, combine flour, brown sugar, baking powder and baking
soda. In another bowl, combeine oil, eggs, oatmeal, raisins and
vanilla; add to dry ingredients and stir just until moistened (the
batter will be thin). Spoon into 12 greased muffin cups. Bake at 350
deg. for 18 min. or until the muffins test done. Yield: 1 dozen.
