------------------------INGREDIENTS-----------------------------
1 T Sesame oil (PLUS 1 tsp) 2 T Rice vinegar
1 sm Onion, sliced 1 T Fresh ginger, grated
12 oz Firm tofu, drained, 2 c Broccoli flowerets
-1/2-inch cubes 1 md Red bell pepper, thin strips
1/4 c Low-sodium soy sauce 1 1/2 c Mushrooms, sliced
-------------------------DIRECTIONS------------------------------
Heat oil in a 12-inch skillet and stir-fry onion until slightly
tender. Add tofu and stir-fry until lightly browned. Add the
remaining ingredients. Gently toss to coat all the ingredients with
the sauce. Cover and simmer over medium heat 5 minutes until the
vegetables are tender.
