6 tb Maple syrup (Grade B) or 2 Garlic clove(s), minced
Grade A maple syrup 1 ts Dried hot red pepper flakes
-flavored with -or to taste
3 Drops maple extract 1/4 ts Salt
1/2 c Water 4 1" thick salmon fillets
2 tb Ginger; peeled and minced -(6 oz ea)
In small heavy saucepan combine maple syrup, water, ginger, garlic,
red pepper flakes, and salt and simmer until reduced to about « cup.
Cool basting sauce.
Preheat broiler.
Arrange salmon, skin side down, on oiled rack of broiler pan and
season with salt. Brush with sauce and broil until just cooked
through, about 6 minutes more.
