1 tb Olive oil 6 oz Tofu, drained
1 sm Onion, diced 4 tb White wine -=OR=- water
1 sm Garlic clove, chopped 2 tb Parsley, chopped
4 oz Cashews, toasted ground Salt, to taste
Heat the oil in a shallow skillet saute the onion garlic until
softened, about 5 minutes. Add this to the nuts in a mixing bowl.
Mash in the tofu. Stir in the wine or water, parsley salt. Press
the pate into indivdual ramekins, smooth the top of the mixture
serve.
