2 tb Olive oil Hot pepper sauce
1 Red bell pepper Salt and pepper
-sliced lengthwise 4 oz Cheese
-into 1/2" strips -(softened goat cheese or
1 Yellow bell pepper Thinly sliced sharp Cheddar
-sliced lengthwise -or Monterey Jack)
-into 1/2" strips 4 Long sandwich buns,
1 md Onion(s), thinly sliced -sliced open lengthwise
1 ts Dried thyme
1. Heat the olive oil in a large skillet. Add the bell peppers and
cook over moderate heat, stirring occasionally, until wilted, about 6
minutes. Add the onion and cook until all the vegetables are
softened, about 15 minutes. Stir in the thyme and season with hot
pepper sauce and salt and pepper to taste.
2. Spread or layer the cheese on the bottom half of the buns and heap
the vegetables on top. close the sandwiches, then transfer them to
plates and serve.
