3 Whole chicken breasts 12 sl Thick-cut bacon
-poached and -cooked crisp and crumbled
-cut in bite-size pieces 3/4 c Sour cream
1 lg Sweet red pepper 3/4 c Mayonnaise
-cut in julienne strips 4 1/2 tb Dijon mustard
2 lg Heads broccoli 4 1/2 tb Raspberry vinegar
-cut in florets 2 tb Dill, finely chopped
Combine chicken with red pepper in a large bowl.
In a vegetable steamer, steam the broccoli for 2-3 minutes, or until
it just starts to get tender. Add it to the chicken and mix it
gently. Mix in the crumbled bacon.
Whisk together the sour cream, mayonnaise, Dijon mustard, raspberry
vinegar and dill. Pour the dressing over the chicken and vegetables
and mix well. Chill salad for at least 2 hours before serving.
