3 tb Olive oil -tomatoes, broken up with
2 lb Chicken pieces -fork
4 Sweet Italian sausage links 3 tb Tomato paste
1 md Onion, sliced 1/2 c Red wine
1 lg Green pepper,seeded and 1 ts Basil
-sliced Pinch sugar
1 c Sliced mushrooms Salt and pepper to taste
1 cn (16 oz) Italian style plum
Heat oil in heavy skillet. Fry chicken, a few at a time, until golden
brown, turning frequently. Remove from skillet and drain on paper
towels. Add sausages to skillet; prick with fork. Fry until well
browned and thoroughly cooked, about 10 minutes. Remove from pan.
Discard all but 3 tablespoons drippings. Add onion, green pepper and
mushrooms to skillet; saute for 5 minutes. Add tomatoes, tomato
paste, wine and seasonings; stir well. Bring to a boil, then add
chicken and sausage. Cover and simmer for 35-40 minutes. Transfer to
serving dish and serve with plain pasta. 4 servings.
