6 lb To 7 pound turkey breast 2 ts Salt
1 c Orange juice 1 ts Pepper
1/4 c Lime juice 2 ts Dried oregano
1/4 c Olive oil Garnishes: fresh sage,
3 tb Apple cider vinegar -oregano, rosemary sprigs
Remove and discard skin and breast bones from turkey. Place
breast halves in a jumbo, heavy-duty zip-top plastic bag; set aside.
Combine orange juice and next 6 ingredients in a jar; close
tightly, and shake vigorously. Set 1/2 cup marinade aside. Pour
remainder over turkey; seal bag. Chill 8 hours, turning bag
occasionally.
Remove turkey from marinade; discard marinade.
Cook turkey, covered with grill lid, over hot coals (400 degrees F
to 500 degrees F) 18 minutes on each side or until meat thermometer
registers 170 degrees F, brushing occasionally with [the 1/2 cup]
marinade. Let stand 10 minutes before slicing. Yield: 8 servings.
Note: to cook turkey in oven, place on a rack in a roasting pan; bake
at 325F for 1 hour and 10 minutes or until a meat thermometer
registers 170F, brushing occasionally with reserved marinade.
