3 ea Green onions - minced 1/4 t Cayenne pepper
3 T Butter or margarine 2 ea Dashes Tabasco
2 T Flour Crackermeal or bread
1 c Milk -crumbs for dredging
1 lb Crabmeat Butter and vegetable oil
20 ea Saltine crackers - crumbled -for frying
1 ea Egg - beaten Boiled crab claws for
1/2 t Salt -garnish (optional)
Saute onions in butter or margarine. Alternate adding flour and milk,
stirring constantly to make a medium-thick white sauce. Remove from
heat and add crabmeat, cracker crumbs, egg, salt and cayenne pepper.
Gently mix together and set aside to cool thoroughly. Shape into 6
patties and dredge in cracker meal or bread crumbs. Put about
1/2-inch of equal parts vegetable oil and butter in a skillet and fry
patties on both sides until they are golden brown.
