4 c Cranberry juice, Eight pieces
Unsweetened 1/2 lb Cranberries
1 1/2 tb Dried basil 2 tb Rice vinegar
1 Onion, thinly sliced 1/4 c Apple juice concentrate
3 lb (to 3 1/2) chicken, cut in 1 ts Cornstarch
-------------------------MIXED WITH------------------------------
2 tb Cold water
Simmer 3 cups of the cranberry juice with the basil and onion slices
10 minutes. Cool; pour over chicken and marinate in the refrigerator
overninght. Poach chicken in marinade until tender; keep warm. Simmer
remianing ingredients except cornstarch and water mixture about 20
minutes or until berries are tender. Stir in cornstarch mixture and
cook until thickened. Serve poured over chicken.
