4 ea Boneless loin pork chops, 1/2 c Jellied cranberry sauce
-trimmed of fat 1 ea Tb honey
1/4 t Pepper 1/8 t Ginger
1/2 c Chicken broth or water 1/8 t Cinnamon
Sprinkle both sides of pork chops with pepper. Spray heavy nonstick
skillet with cooking spray; place over medium heat until hot. Add
pork chops. Cook three minutes each side or until browned. Add
chicken broth; cover and cook 12-15 minutes or until tender, turning
once. In small bowl, combine remaining ingredients; blend well. Pour
over chops. Cook 1 minute, turning chops to glaze. Place chops on
platter; spoon cranberry mixture over top. Per serving: 230 cal., 23g
pro., 18g carb., 8g fat, 150mg sodium, 63mg chol., 370mg potassium.
