2 cn (18-oz. ea.) SW Candied 1/4 c Packed brown sugar
-Yams; undrained 1/2 c Crushed cornflakes
1/4 c Melted butter 1/3 c Chopped pecans
4 ea Eggs; separated 2 tb Melted butter
Beat egg whites in a large bowl until stiff; set aside. Puree candied
yams in a food processor or blender; add 1/4 cup melted butter and egg
yolks and blend well. Pour mixture over egg whites, folding in until
combined well. Spoon into a buttered casserole or straight-sided
souffle dish. Combine brown sugar, conrflakes, pecans and 2 Tbsp.
melted butter in a small bowl; sprinkle mixture over top. Bake at
350 degrees F. for 45 minutes to 1 hour or until puffed and firm.
Serves 8.
