1 lb Split yellow peas
2 qt Chicken stock
1 Meaty smoked ham bone
1 md Onion, chopped
2 Carrots, chopped
2 Ribs
1 md Potato, peeled finely
-cubed
1 Bay leaf
-dashes
1 Clove garlic, pressed or
-minced
-celery, chopped
-thyme, marjoram, savory
Optional: handful of frozen green peas 1 peeled chopped tomato
Rinse and sort peas. To stock pot, add peas, stock and ham bone;
simmer 1 hour. Add the veggies and seasonings and cook for another 1
to 1-1/2 hours. If using optional veggies, add during last 1/2 hour
of cooking. When done, remove bay leaf and serve. Makes a nice main
course with a green salad crusty loaf or dill bread.
