1 tb Vegetable oil Diced
2 tb Clivered gingerroot 1 c Sliced mushrooms
1 Clove garlic, minced 1 tb Soy sauce
2 Boneless skinless chicken 1 tb Oyster sauce
Breasts, cubed 2 tb Chopped fresh coriander,
2 Onions, chopped Mint, or green onion
1 Sweet red or green pepper
In skillet or wok, heat oil over high heat; stir-fry ginger and
garlic for 30 seconds or until fragrant. Add chicken; stir-fry for 2
or 4 minutes or until lightly browned. Add onions, sweet pepper and
mushrooms; stir-fry for 1 to 3 minutes or until softened. Stir in soy
and oyster sauces, tossing to coat. Sprinkle with coriander. Makes 4
servings.
