4 oz Skinless,boned chicken 1/2 ts EACH: basil,celery
-breasts -seed,onion
18 Saltine cracker -powder,oregano,paprika
-squares,crushed 3/8 ts Salt
2 tb Parmesan cheese 1/4 c Evaporated skim milk
3/4 ts Black pepper 1 tb Vegetable oil
Combine cracker crumbs, cheese, black pepper, basil, celery seed,
onion powder, oregano, paprika and salt in a bowl. Dip chicken in
evaporated milk, then coat with crumb mixture. Place in a lightly
greased shallow roasting pan. Bake in a 400 degree oven for 30
minutes. Brush with oil. Bake 10 minutes longer.
Makes 6 servings.
