2 c Chopped onion 1 c Chopped green pepper
1/4 c Butter 1 tb Salt
4 c Uncooked long grain rice 1 To 2 tsp. chili powder
2 cn (6 oz. ea.) small pitted 1 ts Dried oregano
-ripe 1/2 ts Pepper
Olives, drained 4 c Water
2 cn (28 oz. ea.) tomatoes with 3 c (12 oz.) shredded cheddar
-liquid, -cheese
Cut up

In a skillet over medium heat, saute the onion in butter until tender.
Transfer to a large bowl. Stir in the next 8 ingredients. Divide
between two ungreased 13x9x2" baking pans. Stir 2 cups of water into
each pan. Cover and bake at 350 degrees for 1 1/2 hours. Uncover and
sprinkle with cheese. Return to the oven for 5-10 minutes or until
cheese melts.
