6 frog legs -- cleaned
1 (6 to 8)
1 sm can evaporated milk
2 eggs
1 tb baking powder
2 tb vinegar
1 c all-purpose flour
1 cayenne pepper -- to taste
1 salt and pepper -- to taste
Beat eggs, add evaporated milk, baking powder and vinegar. Add salt and
peppers and mix well. Put frog legs into mixture and marinate for at least
1 hour. Remove frog legs and season. Dip frog legs into flour, covering
completely, then fry in 380 fat. Cook until golden brown, about 10
minutes. Serves 3-4. Festival: Rayne Frog Festival; TBA, 1995.
