-cold water, picked over,

2 1/2 qt Water
2 tb Salted butter
2 ea Cloves garlic, finely
-chopped
1 1/2 ts Salt
Few dashes of Tabasco sauce
1/4 ts Ground cumin
1 tb Minced fresh parsley
2 tb All-purpose flour
1/4 ts Baking powder
2 lg Eggs, lightly beaten
Peanut or vegetable oil for
-frying
Salsa de Aguacate (recipe
-follows)
1 ea If using dried chick-peas,
-place them in a large
-stockpot with the
Water, and simmer, covered,
-over low heat for 2 1/2
-hours. Drain and

2 ea In a small skillet over low
-heat, melt the butter.
-When it begins to

-to 3 inches of oil to 375

-until golden brown. Taste
