1 lb Ground beef or Meat Loaf 1 Cabbage
1 c Cooked rice 1 cn Plum Tomatoes
1 Onion 1 ts Sugar
2 Parsley Sprig 1 pn Ground Allspice
1/2 Celery Stalk 1 ts Salt
1 ts Worcestershire Sauce
: Prepare cooked rice. Finely chop the onion, parsley and
celery. Combine, add Worcestershire and saute. Add salt pepper to
taste. Knead with with meat and rice to form "pigs".
: Remove and discard the core from a head of cabbage. Boil the
cabbage while carefully removing the leaves as they wilt from the
head. These are the "blankets".
: Wrap the pigs in the blankets and place in a roasting pan.
Squash the plum tomatoes and add salt, sugar and allspice. Spread
mixture over and around pigs. Bake at 350 degrees for about 1 hour
turning when the leaves begin turning brown and wilting.
