Cooking Preparation of the Recipe:
4 medium potatoes, peeled diced
3/4 c. plain soy or nut milk
1 tsp. salt
1/2 tsp. onion powder
BOIL potatoes until tender. MASH potatoes and milk with potato masher, adding onion
powder then salt to taste. For extra creamy mashed potatoes, use electric mixer. YIELD: 4
servings
VARIATION: If you?re planning to serve CASHEW GRAVY (51) with your potatoes, use
gravy instead of milk.
