12 Egg Whites, at room 1 1/2 c Granulated Sugar
Temperature 1 1/4 c Cake Flour, Sifted
1/4 ts Salt 1 c Confectioner's Sugar
1 ts Cream Of Tartar For dusting
1 1/2 ts Vanilla Extract
*Preheat oven to 350 F.
1. In the large bowl of standing electric mixer, beat the egg whites,
salt and cream of tartar at high speed until frothy; add the vanilla.
Gradually add the sugar, beating the mixture until stiff, but not
dry, peaks form. Sift in the flour and fold gently to blend.
2. Spoon into an ungreased 10-inch tube pan. Bake 50 mins or until
light brown and springy to the touch and an inseerted skewer or
toothpick comes out clean. Turn upside down on a rack and cool for 2
hrs. Run a knife around the edge and center cone to loosen. Invert
onto a serving platter. Place confectioners' sugar in a sieve and
sift over cake. (NO CHOLESTEROL)
