1 c Cilantro -- loosely packed Salt and pepper
1 tb Garlic -- minced 4 Boneless skinless chicken
1/4 c Pecans -- chopped -breasts
6 tb Olive oil 1/4 c Oil
1/4 c Lime juice Salt and pepper
6 ds Tabasco sauce
Make the pesto: combine first 7 ingredients in a food processor and
process until a rough paste is formed. Cover and set aside. Coat
the chicken lightly with oil on both sides and sprinkle with salt and
pepper. Grill the chicken over a medium fire, 7 to 9 minutes per
side. Remove the chicken from the fire, top each breast with a
generous tbsp of pesto. Serve with Red Cabbage Slaw.
