1 tb Olive oil
1 Onion, chopped
1 Clove garlic, minced
1 Sweet red pepper, coarsely
-chopped
Pinch hot pepper flakes
1 cn 19 oz. Italian Spice Stewed
Tomatoes
2 tb Chopped fresh parsley
1/4 ts Each salt and pepper
4 Italian sausages ( 1 lb)
4 Crusty Italian rolls
4 Lettuce leaves
4 ts Freshly grated Parmesan
-cheese
In heavy saucepan, heat oil over medium heat; cook onion and garlic,
stirring occasionally, for 5 minutes or until softened. Add red
pepper and hot pepper flakes; cook for 2 minutes.
Stir in tomatoes, parsley, salt and pepper; bring to boil. Reduce
heat; simmer for 20 minutes or until thickened.
Meanwhile, cut sausages lengthwise almost all the way through. Open
and place, cut side down, on greased grill over medium-high heat;
cook for about 5 minutes per side or until crisp on outside and no
longer pink inside.
Slice each roll in half horizontally; toast, cut side down, for 2 to 3
minutes or until just golden. Top each bottom half with lettuce and
sausage; spoon tomato sauce over top. Sprinkle with Parmesan; cover
with top half of roll. Makes 4 servings. Typed in MMFormat by
