4 sl Bacon;cut into small pieces 2 c Rice; uncooked
1 md Onion; chopped 1 ts Salt
2 c Water; divided 1/2 c Peas; frozen
2 tb Achiote seeds
This is a Guam national dish that is rather mild.
Saute bacon and onion about 5 minutes, drain off fat and set aside.
Add 1/2 cup water to achiote seeds to color the water, about 10 to 15
minutes.
Strain the seeds from the water and pour the red water into a
saucepan; discard the seeds. Add remaining water, rice, salt, bacon
and onion. Bring to a boil, cover and turn heat down to a simmer;
cook 20 to 25 minutes. When rice is almost cooked, stir in frozen
peas. Serve warm.
