6 lg Chicken thighs, rinsed and 3 tb Fresh thyme leaves,
-patted dry -separated from stems
1/4 c Freshly squeezed lemon juice 1/2 ts Red pepper flakes
1/4 c Olive oil 1/2 ts Salt
3 Cloves garlic, finely diced 1/4 c Pine nuts
Place chicken in a large noncorrosive baking dish. Set aside.
In a small bowl, whisk together lemon juice, olive oil, garlic, 2 T
thyme, red pepper flakes and salt. Pour mixture over chicken and coat
both sides, placing thighs skin-side down to marinate for at least 2
hours at room temperature, or up to 12 hours refrigerated. Turn
chicken occasionally to marinate evenly.
Remove chicken from marinade, place in baking dish and sprinkle with
pine nuts. Bake in the middle of a preheated 400'F oven until skin is
golden and juices run clear when chicken is pierced, about 40 minutes.
Remove pan from oven, sprinkle with reserved thyme and serve.
