2 md Onions, finely diced 3 lg Tomatoes, quartered*
2 md Turnips, finely diced 1/2 c Sliced okra
4 md Carrots, finely diced 1 1/2 c Water
6 c Chicken stock 1 c Very thin noodles, cooked
1 sm Cauliflower, cut into tiny 2 tb Grated Parmesan cheese
-florets 1 tb Low sodium soy sauce
*Or 2 1 lb. cans Saute onions, turnips and carrots in 1 cup of the
chicken stock in a large saucepan 20 minutes or until tender. Add
remaining ingredients except noodles, cheese and soy sauce. Simmer 25
minutes more. Add noodles, cheese and soy sauce. Simmer 10 minutes
and serve. Makes 8 servings.
