5 tb Margarine
3 c Kellog's corn flakes;
. crushed to about 1 1/2
. cups (divided use)
2 tb All-purpose flour
1/4 ts Salt
3 tb Onion; chopped
1 1/4 c Skim milk
1 c Swiss cheese; shredded
1 pk Spinach; (10oz) frozen,
. chopped, thawed drained
2 Eggs; well beaten
In a large saucepan, melt the margarine over low heat. Remove 2 Tbsp
of the margarine and mix it with 3/4 cup of the cereal. Set aside for
topping.
To the remaining margarine in the pan, stir in the flour, salt and
onion. Cook and stir about 1 minute. Add the milk gradually,
stirring until smooth, then increase the heat to medium and cook
until the mixture boils, stirring constantly. Remove from the heat.
Add the cheese, stirring until slightly melted. Stir in the spinach,
eggs and the remaining 3/4 cup of cereal. Spread this mixture in a
1-quart casserole dish. Sprinkle the cereal mixture on top of the
spinach mixture Bake at 350øF about 25 minutes or until thoroughly
heated.
