2 tb Olive oil 3 lb Mackerel fillets, cut
1 sm Onion, sliced -into 4 pieces
1/2 Clove garlic, peeled and 1 tb Chopped parsley
-chopped 1 8-ounce can tomatoes,
2 tb Water Undrained
1/2 ts Salt Parsley sprigs, for
1/2 ts Pepper Garnish
1. Place olive oil, onion, garlic, and parsley in large skillet; saute
until onion is browned. 2. Add tomatoes, water, salt, and pepper to
onion mixture; simmer for 5 minutes. Add mackerel, cover, and simmer
for 5 minutes. Turn mackerel over; cook for 10 minutes more. 3.
Transfer fish to serving platter; garnish with parsley sprigs. *From
