Cooking Preparation of the Recipe:

2 lb Sweet Potatoes
1/4 c Butter Or Margarine
1 c Sugar
3 Eggs
3/4 c Evaporated Milk
2 ts Vanilla Extract
1 ts Ground Cinnamon
3 tb Dark Rum -- optional
1 lb Marshmallows

Preheat oven to 375 F. Wash and boil sweet potatoes in their skins
until fork tender. Peel, then add butter or margarine while potatoes
are still hot, and mash with a potato masher until mixture is smooth.
Add sugar, stirring until well mixed. Then add eggs, one at a time,
beating mixture well until all eggs have been added. Stir in
evaporated milk, vanilla, cinnamon, and rum if desired. Pour into a
buttered 2-qt casserole and bake for 30 mins. Top with whole
marshmallows and continue baking for about 5 mins or until melted and
nicely browned. Serve hot.

Yield: 8 servings.
