3 c All-purpose flour 1/3 c Margarine
1 c Whole wheat flour 1/3 c Shortening
1 1/4 ts Salt 1 x Buttermilk, as needed
--------------------------FILLING-------------------------------
1 1/2 c Ricotta cheese 1/4 ts Thyme
1/4 c Parmesan cheese 1 ea Egg, beaten
1 x Salt Pepper to taste 1 c Ham, diced
PASTRY: In mixing bowl, measure flour and salt together. Quarter
margarine and shortening into cubes and add to bowl. Work the dough
by hand, adding buttermilk a tablespoon at a time until kneaded to a
pliable dough consistency. Cover and refrigerate.
FILLING: In mixing bowl, combine all ingredients. Take dough and
divide it into 6 equal balls. On floured surface, roll out dough to
1/4" thickness. Place 1/6 of the filling mixture on dough and fold
dough in half, forming a half-moon shape. Pinch edges together and
prick dough with a fork. Repeat until all are filled. Placed on
greased baking sheet and bake in a 350-degree oven approximately 20
minutes.
