Fast Healthy 9-95 1/2 c Fresh oregano leaves
Carolyn Shaw 8-95 1/4 c Fresh thyme leaves
2 tb Pine nuts, toasted 1/4 c Minced fresh chives
2 cl Garlic, large 2 tb Freshly grated Parmesan
2 c Torn spinach Cheese
3/4 c Fresh flat leaf parsley 1/4 ts Salt
1/2 c Arugula leaves 3 tb Extra vigin olive oil
Drop pine nuts and garlic through food chute with food processor on
and process until minced. Add remaining ingredients except oil;
process until finely minced. With processor on, slowly pour oil
through food chute. Process until well blended. Spoon into a zip loc
bag. Store in refrigerator. Makes 3/4 cup.
Per tablespoon: 53 cal., 1.6 g protein, 4.8 g (82%) fat, 2.1 g carb.,
1 g fiber, 1 mg chol., 1.3 mg iron, 83 mg sodium, 55 mg calcium.
