"Everyone loves slices of 2 1/2 lb Eye of round beef roast
-this fork-tender roast 1 md Onion, chopped
-beef and 1 c Brewed coffee
Its savory gravy. This 1 c Water, divided
-well-seasoned roast is 2 t Dried basil
-Mom's 1 t Dried rosemary
Specialty. People always 1 ea Clove garlic, minced
-ask what her secret 1 t Salt
-ingredients 1/2 t Pepper
Are." - Linda Gaido 1/4 c Flour
1 T Cooking oil Beef bouillon cube
Heat oil in Dutch oven; brown roast on all sides. Add onion and cook
until transparent. Add coffee, 3/4 cup water, bouillon, basil,
rosemary, garlic, salt and pepper. Cover and simmer for 2 1/2 hours
or until meat is tender. Combine flour and remaining water until
smooth; stir into pan juices. Cook and stir until thickened and
bubbly. Remove roast and slice. Serves: 8 From: "Taste of Home"
