2 Pork Tenderloins, (Approx 1 1/4 c Apple Butter *
1/2 lb Ea.) 1 ts Chili Powder *
1/2 c Sugar 1 ts Salt
1/4 c Plum Jam 1/4 ts Ground Ginger
1/4 c Soy Sauce
* The apple butter and chili powder approximate Hoisin Sauce. If
Hoisin Sauce is available, use 2 Tbs instead of the apple butter and
chili powder.
Wipe pork tenderloin; place in a shallow glass baking dish. Combine
all remaining ingredients. Pour over pork, turning each piece until
well coated. Cover and refrigerate overnight to marinate. Uncover and
roast in a 325 F oven for 50 to 60 mins, turning frequently. Serve
hot or cold. Serve thinly sliced as hors d'oeuvres, or part of a
Chinese dinner. Makes 6 to 8 servings.
