4 md Carrots 2 tb White vinegar
1/4 c Onion, minced 1/2 c Seedless raisins
1/2 ts Nutmeg 2 tb Brown sugar
6 tb Olive oil
Scrape the carrots slice them into 1/4" rounds. Heat oil add
carrots, onions nutmeg. When onions are lightly browned, pour in
the vinegar. Cook, covered, over low heat, until carrots are tender.
Meanwhile, soak the raisins in 1/2 c warm water. When carrots are
done, drain raisins dump them into the pot with the carrots along
with the sugar. Stir gently until the raisins are heated through.
Serve steaming hot.
