1/2 c Apricot preserves 4 Boneless, skinless chicken
2 tb To 3 coarse grained or Dijon Breast halves
Mustard
Heat grill. In small bowl, combine preserves and mustard; blend well.
When ready to barbecue, oil grill rack. Brush chicken with apricot
mixture; place on gas grill over medium heat or on charcol grill 4-6"
from medium coals or broiler pan 4-6" from broiler element.
Broil 15-20 minutes until juices run clear and chicken is fork tender,
turning occasionally and brushing frequently with apricot mixture.
Per serving: 170 calories, 27 g protein, 7 g carbohydrate, 0 g fiber,
3 g (16%) fat, 73 mg cholesterol, 150 mg cholesterol, 230 mg
potassium, 3 lean meat and 1/2 fruit exchanges.
