3 tb Firmly packed dark brown sur
2 tb Dijon mustard
3/4 ts Salt
1/2 c Blanched slivered almonds,
. toasted
1 lb Carrots, 1/4 inch thick,
. peeled diagonally sliced
1 tb Chopped parsley

In small bowl, combine first three ingredients and set aside. Cook
carrots in small amount of lightly salted water until barely tender.
Drain carrots and put back into pan, along with the mustard sauce.
Cook over low heat for about 1 minute until carrots are glazed and
hot. Stir in almonds and parsley and serve.
