1 1/2 c All-purpose flour 2 tb Sugar
1 1/2 ts Baking soda 1/3 c Vegetable oil
3/4 ts Salt 2 c Apples -- diced peeled
1/2 ts Ground nutmeg 1 1/2 c Walnuts -- chopped
2 ea Eggs 3/4 c Flaked coconut
1 c Sugar -- plus
In a large bowl, combine the flour, baking soda, salt and nutmeg. In
another bowl beat eggs, sugar and oil. Stir in apples nuts and
coconut. Stir into dry ingredents just until moistened. Fill 18
greased muffin cups three-fourths full. Bake at 350 deg. for 25-30
minutes. Cool in pan 10 minutes before removing to a wire rack.
Yield: 1-1/2 dozen
