3/4 c Cocoa -temperature
1 c Sugar 1 t Vanilla extract
1/4 t Salt 1/8 t Almond extract
1/2 c Hot water 1 c Toasted, chopped walnuts
3/4 c Unsalted butter, room
Combine the cocoa, sugar and salt in a heat-proof bowl over simmering
water. Stir the mixture with a whisk until blended, then add the hot
water. Stir over simmering water until the sugar has completely
dissolved and the mixture is hot, about 3 minutes. Remove from heat
and set aside. Cool. Cream the butter with the vanilla and almond
extract. Add the lukewarm chocolate mixture, continuing to beat until
well blended. Add nuts and scrape mixture into a clean jar. Makes 2
