1 T All-purpose flour 2 t Vegetable oil
1/2 t Salt (optional) 1/2 t Orange marmalade
1/4 t Pepper ds Nutmeg
1 ea Boneless skinless chicken 1/2 c Orange juice
-breast half
Combine flour, salt if desired, and pepper; coat chicken breast. In a
skillet, heat oil on medium; brown chicken. Spread marmalade on top of
chicken; sprinkle with nutmeg. Add orange juice and simmer for 10-15
minutes or until chicken juices run clear. Serves 1. Diabetic

Fat, 1 Fruit, 1/2 Starch; also, 370 Calories, 71mg Sodium, 83mg
