1 c Orzo pasta
6 oz Smoked turkey breast -- cut
In 1/4" cubes
1/2 c Green onions -- thinly
Sliced
1/4 c Red cabbage -- finely
Shredded
1/4 c Fresh cilantro, chopped and
Loosely packed
3 tb Lemon juice
2 tb Regular or lowfat
Mayonnaise
2 ts Olive oil
Cook the orzo according to the package directions, but without adding
the salt. Drain, then rinse with cold water and drain again.
In a large bowl, combine the orzo, turkey, onions, cabbage and
cilantro. In a small bowl, stir together the lemon juice, mayonnaise
and oil. Add to the orzo mixture and toss until well coated. Recipe By
