Cooking Preparation of the Recipe:

Tuna steaks

-----------------------FLAVORED FLOUR----------------------------
1 c Flour 1 ts Garlic powder
1 ts Cayenne 1 tb Dill, dried
1 ts Black pepper OR
1 ts Onion powder 1 tb Parsley, dried

-----------------------FRYING MIXTURE----------------------------
1 c Oil 1 tb Butter
1/2 ts Cayenne

Dip each tuna steak or fillet portion in the flavored flour to coat.
Then dip in egg-milk wash and then in stale crushed bread crumbs.
Place on a rack for 10 min for coating to set.

Heat frying mixture in a skillet. Pan fry tuna til golden. Turn and
finish. Serve with a few drops of pan liquor and top each piece with
a spoon full of Salsa. Garnish with lemon or lime wedges.
