1 lb Large shrimp
4 Fresh jalapeno peppers
Cheddar cheese
1 lb Bacon
Barbeque sauce
Wash shrimp, leaving peelings on, drop in boiling salted water (for
more flavor add onion, celery, garlic, red and black pepper, and
slice of lemon). Boil 10 to 15 minutes, remove, drain and set aside
to cool.
Cut each jalapeno pepper into 4 long pieces. Cut cheddar cheese into
long pieces about 1/4 - 1/2 inch in diameter. Cook bacon until almost
done but not crispy. Peel and devein shrimp, slit down the middle,
(but not into two pieces). Place one pepper and one piece of cheedar
cheese in each shrimp. Wrap each shrimp in bacon. Coat with your
favorite barbeque sauce and place on barbeque grill. Turn as needed.
