1/2 c Dark corn syrup 4 Baking apples
1/2 c Water 1 Egg white
1/4 ts Cinnamon 2 tb Sugar
1 ts Grated lemon rind 14 Blanched almonds, shredded
1 tb Butter 4 Maraschino cherries, chopped
2 tb Sugar
Preheat oven to 350 degrees. Combine first 6 ingredients. Bring to
boil. Remove from heat. Core apples; pare upper halves. Place in
shallow baking pan. Pour syrup mixture over apples. Bake for about 1
hour, or until tender, basting frequently. Remove from oven.
Beat egg white until foamy; gradually beat in 2 tblsp. sugar. Top
apples with meringue; insert almonds and cherries. Return to oven;
bake 15 minutes, or until delicately browned. Serves 4.
