3 T olive oil
1 large onion, peeled, finely chopped
3 garlic cloves, peeled, finely chopped
8 fresh basil leaves, shredded
1 2oz can anchovy fillets, drained, rinsed and chopped
5 medium tomatoes, seeded and chopped
salt and freshly ground black pepper
1 lb spaghetti or bucatini
Heat the olive oil in a pan over medium heat.
Add the onion, garlic and basil.
Sauté till onion is soft.
Add the anchovies, using a fork to mash into a paste.
Add tomatoes, bring to a bubble.
Reduce heat and simmer for 20 minutes.
Cook the pasta.
Drain.
Pour on the hot sauce and mix well.
