2 ts Olive oil 8 oz Ham steak, trimmed of
1 lg Onion; chopped -- all fat, cut in
1 Garlic clove; minced -- bite-size pcs
3 1/2 c Beef broth, defatted 1/2 ts Dried oregano leaves
-- (low-sodium/reg) 1/2 ts Dried basil leaves
-- divided 1/8 ts Black pepper
1 lg Carrot; peel finely chop 3 oz Small elbow pasta
1 lg Celery stalk; finely chopped (or similar pasta)
1 cn Italian-style tomatoes -- uncooked
(w/juice)(14 1/2 oz) -----to serve-----
-- chopped 1 tb Parmesan cheese per
2 1/2 c White kidney beans, cooked Serving; grated
-- drained
Recipe by: Skinny One-Pot Meals - ISBN 0-940625-75-X In large, heavy
pot, combine oil, onion, garlic, and 3 Tbs broth. Cook over medium
heat 5 or 6 mins or until onion is soft. If liquid begins to
evaporate, add more broth.
Add remaining broth along with carrot, celery, tomatoes, beans, ham,
oregano, basil, and pepper. Cover and simmer 35 to 40 mins, stirring
occasionally, until vegetables are tender and flavors are well
blended.
Meanwhile, cook pasta according to package directions and drain well
in colander. Add pasta to mixture, and simmer an additional 2 or 3
mins.
Serve in soup bowls, and sprinkle individual portions with Parmesan
cheese.
